Mix the following ingredients with a beater:
- 1/2 cup oil
- 1/2 cup margarine melted
- 1 3/4 cup sugar
- 2 eggs
Add the following dry ingredients:
- 2 1/2 cup flour
- 2 tsp. cinnamon
- 1 tsp. soda
- 1 tsp baking powder
- 1 tsp salt
- 3 rounded tbsp cocoa
- 2 cups zucchini grated
- 1/2 cup milk
- 1 tsp vanilla
Mix and pour into a greased 9X13 pan. Put topping on top before baking
TOPPING
- 3/4 cup chocolate chips
- 3/4 cup brown sugar
- 3/4 cup nuts
Sprinkle over top of cake. Bake in a 340 to 350 degree oven for 40 min. Enjoy!

Topping and filling:
- 2 tablespoon melted margarine

- 1 tablespoon flour
- 1 tsp cinnamon
Cake:
- 1-1/2 cups sifted flour
- 3/4 cup sugar
- 1/4 cup shortening
- 1/2 tsp salt
- 1/2 cup milk
- 2 eggs
- 2 tsp baking powder
Glaze:
- 1 cup powdered sugar
- 1 tablespoon melted butter
- 1/2 tsp vanilla
- 1 tablespoon water
In a small bowl, combine filling ingredients. In a large mixing bowl, sift flour with sugar, baking powder, and salt. Add shortening and milk and blend well. Add eggs and stir until smooth. Spread 1/3 of batter in greased and floured round cake pan. Sprinkle with half of sugar mixture. Cover with remaining batter. Sprinkle with remaining sugar mixture. Bake at 375 degrees for 30-35 minutes. After cake has cooled, dribble glaze over cake. Make glaze by mixing ingredients together. Add extra water, 1 tsp at a time to desired consistency.

Heat oven to 450 degrees. In 9x9x2 pan, melt butter in oven. Remove pan from oven. Measure flour, sugar, baking powder and salt into bowl. Add milk, stir just until dough forms. Turn dough onto well-floured cloth-covered board. Roll dough around to coat with flour. Knead lightly about 10 times. Roll into 8″ square. With floured knife, cut dough in half, then cut each half into 9 4″ strips. Dip each strip into melted butter, coating both sides. Arrange strips close together in 2 rows in pan. Bake 15-20 minutes or until golden brown.

- 1 egg
- 1 cup milk
- 1/4 cup oil
- 2 cups flour
- 1/2 cup sugar

Great bottoms of 12 cup muffin tin. Beat egg with fork. Stir in milk and oil. Mix in remaining ingredients, just unti flour is moistened. Batter should be lumpy. Fill muffin cups 2/3 full. Bake 20-25 minutes or until golden brown. Remove immediately from the pan

If you have a bread machine, we find that it works great for making dough for rolls. It mixes it just right–all you have to do is roll out, let rise, and bake!
- 1 cup warm water (80 degrees)
- 3 Tbsp butter or margarine
- 3 cups bread flour
- 3 1/2 Tbsp sugar
- 3 Tbsp dry milk
- 1 tsp salt
- 1 1/2 tsp bread machine/fast rise yeast (or 2 tsp if active dry yeast)
Add the ingredients to your bread machine and put on the dough setting. When done, take out, put on floured surface, and let rest for 15 minutes. Then roll out and cut out rolls, or roll in a circle and cut into wedge shapes and roll up. Put on greased sheet and let rise until double in size. Cook at 350 degrees for 15-20 minutes.
