Beef and Noodles
Ingredients
- 2 quarts boiling water
- 9 oz Oriental noodles
- 2 tbsp vegetable oil
- 12 oz flank steak sliced thinly across the grain
- 2 tsp finely chopped garlic
- 2 tsp finely chopped fresh ginger
- 12 oz green beans cut into 1 1/2″ pieces
- 3 carrots pared and cut into 1 1/2″ matchstick pieces
- 3 green onions sliced
- 1 cup cold water
- 3 tbsp soy sauce
- 2 tsp sesame oil
- 1/4 tsp red-pepper flakes
- 2 beef bouillon cubes
- 2 tsp cornstarch
Instructions
- Pour boiling water over noodles in large bowl.
- Cover and let stand.
- Heat 1 T of the oil in nonstick skillet over medium-high heat.
- Add steak to skillet; brown on all sides.
- Add garlic and ginger; cook 1 minute.
- Remove meat from skillet.
- Add remaining oil to skillet.
- Add green beans, carrot and green onion; stir-fry 3 minutes.
- Whisk together cold water, soy sauce, sesame oil, pepper flakes, bouillon cubes, and cornstarch in small bowl until smooth.
- Stir into skillet.
- Cook, stirring, until mixture thickens and boils.
- Lower heat; cover and simmer 1-2 minutes or until vegetables are tender-crisp.
- Drain noodles.
- Add to skillet with reserved meat.
- Stir well to blend ingredients.
- Heat to serve.
