Grandma Tibbitts’ Apple Squares
Ingredients
- 3 eggs
- 1 3/4 cups sugar
- 2 cups sifted flour
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup oil
- 1 tsp vanilla
- 2 cups thinly sliced apples
- 3/4 cup chopped walnuts optional
Old-Fashioned Sauce
- 1 cup sugar
- 2 T cornstarch
- 1/2 tsp salt
- 2 cups cold water
- 1/4 tsp nutmeg
- 2 T butter or margarine
- 1 tsp lemon or vanilla extract
Instructions
- Beat eggs and add sugar gradually.
- Beat until mixture is light and fluffy.
- Add sifted dry ingredients.
- Stir in oil and vanilla, blending well.
- Fold in apple slices and nuts.
- Turn into greased 9×13 pan and bake at 350 degrees for 40-45 mins.
- Cut into squares to serve. These freeze well.
- Also good served warm with ice cream, whipped topping, or Old-Fashioned Sauce.
Old-Fashioned Sauce
- Mix sugar and cornstarch with salt in a saucepan.
- Stir until cornstarch is blended.
- Add cold water gradually.
- Stir well.
- Place on stove and bring to a boil, stirring constantly until thickened.
- Add nutmeg, butter and flavoring.
- Serve warm.
