Grandma Tibbitts’ Oatmeal Cake
Ingredients
Cake
- 1 1/2 cups boiling water
- 1 cup oatmeal
- 1/2 cup margarine or butter
- 1 cup brown sugar packed
- 1 cup white sugar
- 2 eggs
- 2 cups flour
- 1 tsp cinnamon
- 1 tsp nutmeg
Topping
- 1/2 cup melted margarine
- 3/4 cup brown sugar
- 1/3 cup evaporated milk
- 1 cup pecans or walnuts chopped
- 1 cup coconut
- 1 tsp vanilla
Instructions
- Pour boiling water over oats and let set 20 mins.
- Cream butter and sugar.
- Beat in eggs and soaked oatmeal.
- Sift and add dry ingredients.
- Turn into greased 13×9 pan.
- Bake in 350 degree oven for 35 mins.
- Cool in pan.
- Mix topping and spread over cake.
