Tex-Mex Casserole
Ingredients
- 1 lb. ground beef
- 3/4 cup chopped onion
- 1/2 cup chopped celery
- 1 tsp. seasoned salt
- 1/2 tsp. pepper
- 1-1/2 tsp. chili powder
- 12 oz can whole kernel corn drained
- 15 oz can red kidney beans drained
- 1/2 cup sliced olives
- 2-8 oz cans tomato sauce
- 1/2 cup shredded cheddar cheese
- 1/2 cup coarsely crushed corn chips
- sour cream
Instructions
- Brown ground beef, then add onion and celery.
- Cook until meat is done, then drain.
- Stir in next 7 ingredients. Simmer for 15 to 20 minutes.
- Pour into a 2-1/2 quart casserole dish.
- Sprinkle with cheese, then corn chips.
- Heat at 350 degrees until cheese melts.
- Top with sour cream.
