Bagels
Ingredients

cup
milk
scalded
1/2
tsp
salt
3 3/4
cups
flour
1/4
cup
margarine
1
tsp
cold water
1 1/2
T
sugar
1
egg
separated
1
pkg yeast
Instructions
Add butter, sugar, and salt to milk.
While lukewarm, add yeast, well-beaten egg white and flour.
Knead. Let rise 1 hour.
Roll out in pieces twice as long as a finger. Shape into rings.
Let stand on a floured board only until they begin to raise, about 10 mins.
Drop one at a time into very hot but not boiling water.
Turn twice to cook both sides. They must be light and keep their shape.
Place on a baking sheet.
Brush tops with egg yolk beaten with 1 tsp water.
Bake at 400 degrees until brown.
