Grandma Tibbitts' Apple Squares

Ingredients

  • 3 eggs
  • 1 3/4 cups sugar
  • 2 cups sifted flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup oil
  • 1 tsp vanilla
  • 2 cups thinly sliced apples
  • 3/4 cup chopped walnuts optional

Old-Fashioned Sauce

  • 1 cup sugar
  • 2 T cornstarch
  • 1/2 tsp salt
  • 2 cups cold water
  • 1/4 tsp nutmeg
  • 2 T butter or margarine
  • 1 tsp lemon or vanilla extract

Instructions

  • Beat eggs and add sugar gradually.
  • Beat until mixture is light and fluffy.
  • Add sifted dry ingredients.
  • Stir in oil and vanilla, blending well.
  • Fold in apple slices and nuts.
  • Turn into greased 9×13 pan and bake at 350 degrees for 40-45 mins.
  • Cut into squares to serve. These freeze well.
  • Also good served warm with ice cream, whipped topping, or Old-Fashioned Sauce.

Old-Fashioned Sauce

  • Mix sugar and cornstarch with salt in a saucepan.
  • Stir until cornstarch is blended.
  • Add cold water gradually.
  • Stir well.
  • Place on stove and bring to a boil, stirring constantly until thickened.
  • Add nutmeg, butter and flavoring.
  • Serve warm.
