Tex-Mex Casserole

Ingredients

  • 1 lb. ground beef
  • 3/4 cup chopped onion
  • 1/2 cup chopped celery
  • 1 tsp. seasoned salt
  • 1/2 tsp. pepper
  • 1-1/2 tsp. chili powder
  • 12 oz can whole kernel corn drained
  • 15 oz can red kidney beans drained
  • 1/2 cup sliced olives
  • 2-8 oz cans tomato sauce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup coarsely crushed corn chips
  • sour cream

Instructions

  • Brown ground beef, then add onion and celery.
  • Cook until meat is done, then drain.
  • Stir in next 7 ingredients. Simmer for 15 to 20 minutes.
  • Pour into a 2-1/2 quart casserole dish.
  • Sprinkle with cheese, then corn chips.
  • Heat at 350 degrees until cheese melts.
  • Top with sour cream.
