Beef and Noodles

Ingredients

  • 2 quarts boiling water
  • 9 oz Oriental noodles
  • 2 tbsp vegetable oil
  • 12 oz flank steak sliced thinly across the grain
  • 2 tsp finely chopped garlic
  • 2 tsp finely chopped fresh ginger
  • 12 oz green beans cut into 1 1/2″ pieces
  • 3 carrots pared and cut into 1 1/2″ matchstick pieces
  • 3 green onions sliced
  • 1 cup cold water
  • 3 tbsp soy sauce
  • 2 tsp sesame oil
  • 1/4 tsp red-pepper flakes
  • 2 beef bouillon cubes
  • 2 tsp cornstarch

Instructions

  • Pour boiling water over noodles in large bowl.
  • Cover and let stand.
  • Heat 1 T of the oil in nonstick skillet over medium-high heat.
  • Add steak to skillet; brown on all sides.
  • Add garlic and ginger; cook 1 minute.
  • Remove meat from skillet.
  • Add remaining oil to skillet.
  • Add green beans, carrot and green onion; stir-fry 3 minutes.
  • Whisk together cold water, soy sauce, sesame oil, pepper flakes, bouillon cubes, and cornstarch in small bowl until smooth.
  • Stir into skillet.
  • Cook, stirring, until mixture thickens and boils.
  • Lower heat; cover and simmer 1-2 minutes or until vegetables are tender-crisp.
  • Drain noodles.
  • Add to skillet with reserved meat.
  • Stir well to blend ingredients.
  • Heat to serve.
