Grandma Tibbitts' Oatmeal Cake

Ingredients

Cake

  • 1 1/2 cups boiling water
  • 1 cup oatmeal
  • 1/2 cup margarine or butter
  • 1 cup brown sugar packed
  • 1 cup white sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Topping

  • 1/2 cup melted margarine
  • 3/4 cup brown sugar
  • 1/3 cup evaporated milk
  • 1 cup pecans or walnuts chopped
  • 1 cup coconut
  • 1 tsp vanilla

Instructions

  • Pour boiling water over oats and let set 20 mins.
  • Cream butter and sugar.
  • Beat in eggs and soaked oatmeal.
  • Sift and add dry ingredients.
  • Turn into greased 13×9 pan.
  • Bake in 350 degree oven for 35 mins.
  • Cool in pan.
  • Mix topping and spread over cake.
